  • 4 teaspoons salt

For potato stuffing:
  • 500 grams of potatoes (boiled and light mashed)
  • 1 tbsp oil or ghee
  • 4 teaspoons cumin seeds
  • 1 tbsp ginger (finely chopped)
  • 1-2 green chillies (finely chopped)
  • 1 pinch asafetida
  • 4 teaspoons Kashmiri red chili powder
  • ½ tsp salt (as per taste)
  • ¾ teaspoon garam masala
  • ½ tsp cumin powder
  • ½ tsp amchur powder or chaat masala
  • ½ tsp fennel powder (optional)
  • 4 cup green peas
  • 4 cups green coriander (finely chopped)
To fry:
  • Oil as required

Method of making samosas:

You can follow the steps given below to prepare samosas:

1. To make samosa, its flour is first prepared, for which you add maida, celery and salt to a big pot and mix well.

2. Now add oil or ghee to it and mix it well with hands until it starts to look like breadkram.

3. After that, add a little water and knead it hard and tight and cover the dough and keep it for 25 to 30 minutes.

4. Now it is the turn to prepare potato stuffing for which heat oil in a pan and then add cumin seeds to it.

5. When cumin seeds start crackling, add ginger, green chillies and asafoetida and fry it lightly.

6. After that add red chili powder, garam masala, cumin powder, mango powder and fennel powder and fry lightly.

7. Finally add boiled and mashed potatoes and peas and add it to the roasted and finally chopped coriander for two to three minutes.

8. Stuffing is completely ready, now remove it from the gas and let it cool.

9. Now it is the turn to make samosa for which divide the dough into equal parts.

9. Take a dough and roll it down, not too thin and too thick. Then cut it from the middle and divide it into two parts.

10. Take a half part and apply a little water on its edges and shape the corner. After that fill the stuffing of the potato ready in this corner and put water on the edges and close the samosas well and press it lightly.

11. Similarly you can prepare the rest of the samosas.

12. Now it is the turn to fry the samosas and take the pan for it and heat the oil on low flame.

13. When the oil is light hot, add samosas to it and fry the samosas on low flame for 10 to 12 minutes.

14. When the samosas become light golden, then turn the heat medium and fry the samosas until it becomes crisp.

15. When samosas become golden and crispy, take them out and keep them in a plate.
